Job Description
Banquet Chef
Multi-location, high volume, rapidly growing winery/restaurant/event center is seeking an experienced, passionate, talented, and highly motivated Banquet Chef to expand and manage our wedding and special event catering business.
This is a very hands-on job and we are looking for a catering professional who is a leader/player/coach. Job responsibilities include planning menus, overseeing our catering equipment requirements, training our food service staff on catering operations, developing event food service plans and staffing requirements, managing food ordering, food preparation, and food service, as well as set-up and clean up during events. To be successful in this role, you should have work experience in catering or commercial kitchens, solid culinary, and organizational capabilities.
Duties Include:
In coordination with our Event Manager and Executive Chef, gather customer requirements to fulfill banquet orders
Plan food and beverage menus considering clients’ preferences and special requests (for example Vegan/GF)
Handle food costing, ordering, inventory management, portion control etc. to ensure profitability
Schedule staff shifts
Train and manage personnel on food service planning, prep and food service
Oversee and personally participate in food prep and food service
Document recipes and costing
Ensure compliance with health and safety regulations

You are expected to be super polite and super friendly, and ensure our company policies are followed by guests and staff in all interactions.
You are expected to be well-groomed, wear a clean and pressed uniform (to be provided), and comfortable, clean/polished shoes.
REQUIREMENTS
Minimum of 5 years hospitality/commercial kitchen experience including 3 years banquet style catering leadership/chef experience.
You must be at least 21 years old, have a social security card, and valid driver’s license.
Be physically capable of standing and serving customers for several hours each day.
Be physically capable of lifting and carrying 40 pounds.
Be physically capable of carrying trays with wine stems and plates.
Be able to multi-task in a fast-paced work environment.
