Summary of Position:
Terramar Brewstillery is a locally focused brewery, cidery, distillery, serving wood fire pizzas, small bites, and salads using the best ingredients from the Skagit Valley. Duties & Responsibilities:
Directly responsible for all kitchen functions including maintaining and improving systems, food purchasing/ordering, maintenance and improvement of quality standards; sanitation and cleanliness; scheduling, training and managing of kitchen employees, and managing food costs/margins.
Administrative Responsibilities
o Maintain and improve systems for inventory, ordering, minimizing product waste, recipes, preparation, and cleaning.
o Manage food costs/margins
o Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met
o Assures the kitchen properly follows opening and closing checklist for kitchen stations. Assists others in opening and closing the kitchen. Delegates opening and closing duties responsibly when not personally present
o Be aware of overtime and schedule appropriately attempting to minimize OT especially during slower periods. Delegate hours and responsibilities to qualified kitchen staff to minimize personal overtime hours
o Work with owners and management to maintain policies regarding personnel. Administer prompt, fair and consistent corrective action for all violations of company policies, rules and procedures
o Manage and lead, by positive example, all kitchen employees
o Oversee training of new kitchen employees
Chef Activities
o Develop relationships with local farmers and producers
o Work closely with local farmers and producers to create buying schedules and keep up with seasonal availability
o Collaboratively work with management and staff to develop recipes based fresh locally available produce, meats, cheeses, herbs, etc.
o Maintain accurate COG’s with the use of our software systems and price menu items appropriately
o Develop plate presentation and garnish standards for all dishes
o Establish portion sizes and create recipe cards for all new menu items and train staff on preparation.
o Assumes 100% responsibility for the quality of products served
o Assists in food prep as needed.
o Act as lead line cook on the weekends
o Estimate the amount of food that needs to be prepared and predict possible fluctuations
o Order and price check required ingredients for operations
o Ensure that all received products are to specifications, correct unit count, and condition
o Maintain an inventory of materials used, check supplier invoices for accuracy, and suggest strategies to cut kitchen costs and increase profitability
Food sanitation, safety and preparation
o Familiar with and assure compliance with all Washington State and Skagit County Health Department food safety guidelines.
o Frequently review and assess all kitchen procedures to ensure employees maintain a safe and hygienic cooking environment.
o Responsible for maintaining appropriate cleaning schedules for kitchen floors, mats, walls, other equipment and food storage areas.
o Ensure that all equipment is kept clean and kept in excellent working condition
o Responsible for training kitchen personnel in cleanliness and sanitation practices, equipment safety and operation.
o Must know how to prepare and store every item of food that is served. Must be well versed in cooking temperatures and times as well as the storage methods required for foods to retain their flavor, freshness and nutritional value.
Qualifications:
o 5+ years' culinary experience
o 2+ years' kitchen management experience
o Excellent written and oral communication skills with the ability to communicate clearly with managers, FOH, BOH, farmers and guests
o Proficient with budgeting
o Superior attention to detail
o Excellent organizational skills
o Excellent customer service skills
o Willingness to help complete any task
o Ability to work well under pressure and in a fast-paced environment
o Experience with delegating tasks and maintaining fast speed of service
o Hands-on experience with planning menus and ordering ingredients
o Knowledge of a wide range of recipes and cooking techniques
o Available to work flexible schedule including weekends, and holidays
o Able to reach, bend, stoop and frequently lift up to 50 pounds
o Able to work in a standing position for long periods of time (up to 12 hours)
o Washington state food handlers’ card
o Valid driver license
