We are seeking a skilled and detail-oriented Meat Cutter / Boner to join our team. The ideal candidate will be responsible for breaking down carcasses, deboning, trimming, cutting, and preparing various cuts of meat according to quality and safety standards. This role requires a strong understanding of meat processing, knife handling, and food safety practices.
Key Responsibilities:
Break down whole carcasses (beef, pork, lamb, poultry, etc.) into primal, sub-primal, and retail cuts.
Debone meat accurately and efficiently with minimal waste.
Trim and prepare meat cuts for packaging, display, or further processing.
Ensure all cuts meet quality, portion, and presentation standards.
Maintain a clean and sanitary work area in compliance with food safety regulations.
Operate and maintain cutting tools, saws, grinders, and other meat processing equipment.
Identify and remove defects or spoiled portions of meat.
Follow all safety protocols, including proper use of personal protective equipment (PPE).
Communicate with supervisors and coworkers to ensure smooth workflow.
Monitor inventory of meat products and report shortages or quality issues.
Requirements:
Proven experience as a meat cutter, boner, or butcher (1–3 years preferred).
Strong knowledge of meat cuts, trimming, deboning, and portioning techniques.
Ability to use knives, saws, grinders, and other meat cutting equipment safely and effectively.
Understanding of food safety and hygiene practices (HACCP knowledge a plus).
Physically fit with the ability to lift heavy products (up to 50 lbs) and stand for long periods.
Good communication and teamwork skills.
High school diploma or equivalent preferred.
Working Conditions:
Cold working environment (refrigerated or freezer rooms).
Fast-paced and physically demanding.
May require early morning, evening, or weekend shifts depending on operation hours.
