POSITION OVERVIEW:

The Kitchen Manager is responsible for managing and overseeing the efficient operation of the kitchen and the staff. The Kitchen Manager will collaborate with the Operating Owner to coordinate all aspects of kitchen operations including ordering, food prep, cooking and inventory management. The Kitchen Manager will supervise and train the kitchen staff and adhere to all safety regulations.

KEY RESPONSIBILITIES:

Supervise daily kitchen operations ensuring efficiency, quality, safety and effective cost management.

Perform and manage food preparation.

Work closely with the Operating Owner to determine weekly food specials and ensure the kitchen staff is well informed and trained to execute and deliver.

Place daily orders, manage vendor related issues, shortages, produce consistency with a focus on price fluctuation.

Cook lunch and dinner service as needed and be familiar with all menu items.

Facilitate expediting of food service in the kitchen as needed.

Work closely with line cook, expediter and kitchen staff to ensure preparedness for dinner service; perform effective transfer of day to night shift of kitchen staff.

Track and manage inventory and provide consistent input and needs to Operating Owner.

Create and implement opening and closing checklists for kitchen staff to utilize on a daily basis.

Collaborate with front-of-house staff to ensure seamless service during peak hours.

Insight into Cost of Goods Sold and work closely with Operating Owner to ensure effective management of costs.

Manage and delegate the daily upkeep, cleanliness and organization of freezers and kitchen storage.

Partner with the Operating Owner in the hiring and training of kitchen employees.

Compliance with operational safety and sanitation standards are met.

EXPERIENCE:

4+ years of proven experience in hospitality in a Back of House management position.

Strong background in kitchen operations, including cooking prepping and shift management.

Familiarity with Italian food is beneficial.

Must be fluent in English & Spanish with outstanding communication skills.

Food Service Management Certification a plus.
