From the team that brought Paper Tiger, Roma Cafe, Bramhall Pub, Congress Street Bar and Grill, and Nosh to Portland comes Camp Pennant, a playful and inspired waterfront restaurant and bar at 250 Commercial Street in the Old Port.

Camp Pennant is home to Pennant Distilling and Brewing brand of spirits and beer. With the addition of a state-of-the-art wood-burning oven, turning out unforgettable Neapolitan-style pizzas complemented by seasonal salads and sandwiches. Camp Pennant is seeking a talented and passionate Kitchen Manager to lead our culinary team and maintain the highest standards of kitchen operations.

Job Overview:

As the Kitchen Manager, you will be responsible for overseeing daily kitchen operations, ensuring that all food is prepared to the highest quality standards, and managing the kitchen staff. You will work closely with the Director of Operations and Front of House team to deliver a seamless dining experience for our guests.

Key Responsibilities:

Supervision & Leadership:

-Manage and lead kitchen staff, providing guidance, training, and development opportunities.

-Ensure kitchen staff follows health and safety regulations, including proper food handling, sanitation, and cleanliness standards.

-Assist in the hiring, training, and scheduling of kitchen personnel.

Operational Management:

-Oversee the preparation, cooking, and presentation of food to ensure consistency, quality, and efficiency.

-Manage kitchen inventory, including ordering, receiving, and maintaining supplies and ingredients.

-Monitor food costs, waste, and portion control to ensure profitability while maintaining quality.

Quality Control:

-Ensure all dishes are prepared according to the restaurant’s standards and recipes.

-Conduct regular inspections of the kitchen to ensure cleanliness and organization.

-Address customer complaints or concerns regarding food quality or preparation.

Collaboration:

-Work closely with the Front of House and Director of Operations to develop seasonal menus and implement daily specials.

-Maintain communication with the team to ensure smooth operations and a positive work environment.

Qualifications:

-Proven experience as a Kitchen Manager, Sous Chef, or in a similar leadership role in a high-volume kitchen.

-Strong knowledge of kitchen operations, food safety, and sanitation.

-Excellent leadership, organizational, and time-management skills.

-Ability to work in a fast-paced environment while maintaining attention to detail.

-Strong communication and interpersonal skills.

-Must be ServeSafe Certified or willingness to obtain once hired.

-Culinary degree or equivalent work experience preferred.

-Flexibility to work evenings, weekends, and holidays as required.
