Jing Yan, an Asian-inspired restaurant on Munjoy Hill, is seeking an Executive Chef to oversee the culinary programs at both Jing Yan and its sister bar, Low Key, located across the street. This full-time position requires a commitment of 45-50 hours per week with two consecutive days off.
Main Responsibilities
Food
Fully responsible for menu development and quality control for both Jing Yan and Low Key.
Develop seasonal specials (two per season for each location)
Provide inspiration and creative influence to the Culinary Team.
Ensure food costs fall within the target range (<35% for Jing Yan, <25% for Low Key).
Monitor food safety procedures and standards, reporting any concerns to the GM.
Completion of a ServSafe Manager course is required.
Team
Maintain a reasonable response time for all communication, with at least a confirmation response.
Directly oversee culinary staff development to ensure all duties are met and exceeded; handle escalated staff issues, and communicate unresolved issues with the General Manager.
Act as a general manager of Jing Yan and/or Low Key, handling both front-of-house and back-of-house issues during service. Serve as the manager on duty for guest issues that escalate beyond the bar manager's ability.
Oversee training for all direct reports (kitchen staff).
Provide feedback to direct reports and develop training standards.
Address staff issues urgently, escalating to the direct manager if needed.
Be capable of covering any position in the kitchen at any time.
Participate in interviews for new staff members.
Administrative
Record monthly inventory and make necessary adjustments.
Order all food and bar products required from suppliers, managing orders to reduce 86'd items.
Qualifications
Proven experience as an Executive Chef or similar role.
Completion of a serve safe manager certificate is required
Strong leadership and communication skills.
Ability to inspire and mentor culinary staff.
Thorough knowledge of food safety standards and practices.
Creativity and passion for developing unique and high-quality dishes.
Excellent organizational and time management skills.
