I've been in the business for 38 years as an owner, chef, manager and consultant. I was a head trainer for Outback when they first came out, I was one of the first contestants called for the very first Food Networks "Great Food Truck Race," I've designed over 15 first of their kind restaurant concepts and designs, written articles with the CDC for a major newspaper, given seminars called "Pride & Performance"and many other accomplishments. When I am asked to help with a struggling pre existing operation I do a full analysis of everything that can effect your bottom line. I look at menu, ticket average, voids, utility usage, scheduling, prep methods, line efficiency, liquor sales, labor cost, food cost, waste, demographics of the area, inventory, purchases and even proper hiring. If need be I can retrain staff on proper customer service, food handling and efficiency. Your investment is your house mortgage, car payments, kids tuitions and more. I have designed hiring exams for every position in a restaurant. everyone talks a good game when they come in and it doesn't matter how much experience they have. it doesn't mean they were good at what they did. My hiring exams tell the real story of how much they know about the position, equipment, knowledge of the product, food handling. safety and scenarios of how to handle orders and the preparing of it. I've created specialized labor conscious scheduling sheets and anti theft inventory sheets that prevent falsifying numbers.
