RUSTIC BAKERY has been making and serving organic handmade baked goods since 2005. We operate four popular cafes in Marin and have a wholesale division in Petaluma with products sold throughout the US. This position is in our Bakery Commissary in Novato, supplying the finest pastries, breads, cookies, and cakes to our cafes. We strive for locally sourced ingredients of the highest quality when making our products and the same goes for our people. ESSENTIAL DUTIES AND RESPONSIBILITIES
This position sets up and manages pastry production for the Commissary based on orders from the Cafés, catering, and special orders. This requires planning, organization, follow-through, and leadership as well as staff development, supervision, and a willingness to grow with the company. This position is expected to set the standards for product quality, cost controls, and freshness. Promoting teamwork, a positive attitude, and modeling respect for staff at all levels is key.
Sets the example for staff, modeling safe practices, uniform standards, and Company culture.
Promotes teamwork, safety, and a productive work environment.
Hires, monitors, trains, and develops the Pastry team; Provides regular performance feedback to staff.
Coordinates with HR Depart to manage time cards, employee data, change of status, and job related injuries/accidents.
Establishes procedures, prepares and coordinates schedules, and expedites workflow.
Assigns all side work duties and ensures tasks are completed in a timely manner.
Ensures Rustic Bakery standards of quality, portion control, and presentation are adhered to consistently.
Coordinates with front of house staff to ensure guest expectations are met or exceeded.
Ensures all sanitation procedures are being followed including all health and safety regulations and procedures.
Utilizes bakery tools or machines as required; maintains equipment and schedules repairs and maintenance as needed.
Reads recipes, measures, cuts, and otherwise works with great precision.
Develops and executes new product ideas and recipes, including costs, with approval from Culinary Director.
Provides product knowledge and specifics in all menu items and their execution based on exact recipes.
Determines type of ingredients and supplies required; places order with vendors and maintains necessary par levels.
Completes all necessary reports, forms and administrative work daily.
Sets the standards for product quality. Examines vendor deliveries and reports any not meeting standards.
Maintains food and labor cost targets.
Possesses and maintains thorough understanding of industry and stays abreast of industry trends.
Provides back-up for the Commissary Bread Manager as needed.
Other duties as assigned include assisting Kitchen, Front of House, and Bread Teams as needed.
REQUIREMENTS

Proficiency in the correct handling of all foods.

Ability to work a flexible schedule including holidays, special occasions, and weekends.
Communicates effectively and accurately, both verbally and in writing. Bilingual preferred (Spanish & English).
Takes direction and follows instruction with attention to detail; Ability to identify and address potential issues.
Strong time management skills.
EXPERIENCE
Five years of Bakery/Pastry experience and two years of supervisory experience.
Working knowledge of POS systems and other technical software specific to the industry.
Must be available to work a varied schedule including evenings, weekends, and holidays.
