Position Summary:

The line cook is the second-in-command in the kitchen and plays a key role in maintaining high food standards, ensuring kitchen cleanliness, managing prep and line staff, and assisting in all aspects of back-of-house operations. This role supports the Executive Chef in menu execution, training staff, and maintaining a professional, efficient, and positive kitchen environment.

Key Responsibilities:

Food Preparation & Quality:

Supervise and actively participate in all food preparation and cooking

Ensure food quality, consistency, and presentation align with restaurant standards

Oversee proper portion control, waste management, and use of ingredients

Kitchen Operations:

Ensure kitchen stations are stocked, prepped, and organized for service

Maintain cleanliness and adherence to sanitation and food safety guidelines (HACCP/Health Dept.)

Monitor and maintain kitchen equipment; report issues promptly

Leadership & Staff Management:

Assist with training, mentoring, and supervising kitchen staff

Ensure all staff are adhering to recipes, cleanliness, and professionalism policies

Provide leadership in the absence of the Executive Chef

Inventory & Ordering:

Assist with ordering, receiving, and organizing inventory

Conduct inventory counts and control waste/spoilage

Ensure proper storage, labeling, and FIFO rotation

Event & Banquet Support:

Help execute banquet, catering, and special event menus

Coordinate with front-of-house and event staff for smooth service

Qualifications:

3+ years of kitchen experience, preferably in a supervisory or sous chef role

Strong understanding of cooking techniques, Italian cuisine a plus

Food Handler's Certification required; ServSafe Manager preferred

Excellent communication and team leadership skills

Ability to work nights, weekends, holidays, and under pressure

Organized, clean, punctual, and dependable

Physical Requirements:

Ability to stand for long periods, lift 50 lbs, and work in a fast-paced environment
