Hello! To be considered for this position you must be well-versed in all things culinary and take great pleasure in nourishing other people with good food and warm hospitality. This is a dynamic position that requires extensive experience working in a busy commercial kitchen. As the Kitchen Manager you’ll be responsible for maintaining order in a farm-to-table kitchen and bakery that offers humble, yet high quality, everyday fare. You'll play an integral role in maintaining the overall vitality of the kitchen, which means promoting an environment that is professional, happy, productive, organized, and clean.

JOB DESCRIPTION

- Above all you must care a great deal about quality and details because you set the standard for the rest of the team.

- You must have experience working with a farm-to-table program that involves sourcing ingredients directly from different growers. This means you have to know how to manage a complex supply chain that is constantly changing and you must know how to incorporate seasonal ingredients into the weekly menu.

- Collaborate to develop seasonal menu items and specials, taking into account customer preferences and seasonal ingredients.

- Oversee all aspects of food preparation, including cooking, baking, and plating, to ensure high-quality dishes are consistently served.

- Ensure that everyone follows standard recipes and procedures to maintain consistency and quality.

- Be prepared to master every station in the kitchen, so that you are able to train and supervise kitchen staff, including cooks and bakers, to ensure they adhere to recipes, portion sizes, and food safety standards.

- Manage food costs and kitchen expenses to meet budgetary goals.

- Schedule kitchen staff shifts and manage labor costs effectively.

- Monitor inventory levels and order ingredients and supplies as needed to minimize waste and maintain optimal stock levels.

- Ensure compliance with health and safety regulations and maintain a clean and organized kitchen environment.

- Butcher whole pasture-raised chickens, cook chicken and other proteins, prepare large batches of chicken stock, soups, salad dressings, cooked grains and legumes, cooked eggs

- Wash vegetables and store properly

- Use professional knife skills and have experience using commercial kitchen equipment (Rational combi oven, convection oven, cook range, Robot Coupe food processor, Vitamix blender, 30 Quart Mixer, smoker, deli slicer, sous vide, meat grinder, etc).

- Follow detailed recipes for cooking proteins, grains, beans, stocks, etc.

- Assemble dishes like sandwiches, salads, bowls, avocado toast, granola parfaits, etc.

- Maintain a neat and tidy environment at all times.

- Wash all smallwares, pots, pans, and clean equipment.

- Ensure daily/weekly checklists are followed.

QUALIFICATIONS

- Previous experience as a Kitchen Manager or a more senior ranking position in a restaurant and bakery environment.

- Extensive knowledge of food preparation techniques, cooking methods, and baking principles.

- Strong leadership and communication skills with the ability to motivate and inspire a team.

- Excellent organizational and time management skills, with the ability to prioritize tasks effectively.

- Food Safety Manager certification.

- Ability to work well in a fast-paced kitchen environment.

- Flexibility to work evenings, weekends, and holidays as required.
