Job Title: Head Sushi Chef

Compensation: DOE (Depends on Experience)

Job Summary:

We are seeking a motivated and skilled Head Sushi Chef to oversee and coordinate the activities of cooks and kitchen staff. The ideal candidate will have experience in recipe development, kitchen management, and food preparation, ensuring the consistent quality of meals and maintaining a safe, organized kitchen environment.

Responsibilities:

Supervise and coordinate kitchen staff, ensuring smooth operations during service.

Develop and update recipes, and collaborate with the General Manager/partners to plan menus.

Maintain consistency and quality of all meals, especially ensuring the quality and freshness of fish and other dishes.

Inspect deliveries from suppliers (produce, meat, fish, dry goods) and ensure that kitchen staff checks for freshness and quality.

Monitor inventory and manage ordering of food and supplies.

Inspect kitchen work areas for cleanliness, safety, and functionality, reporting equipment malfunctions to the General Manager.

Train kitchen staff on new menu items and proper preparation techniques.

Uphold health and safety standards, including sanitation practices, and ensure compliance with local health department regulations.

Requirements:

Proficient knife skills and ability to execute food preparation to restaurant specifications.

Strong communication skills and the ability to be a team player.

Ability to maintain a clean, organized, and efficient work area.

2-3 years of prior experience in a kitchen environment.

Ability to stay calm under pressure and maintain high standards during busy times.

Strong organizational skills and the ability to forecast food needs.

Leadership abilities with the ability to delegate tasks effectively.

Deep knowledge of the food industry and customer-oriented mindset.

Ability to communicate effectively with all levels of staff, from line cooks to management.
