Job Summary

Seeking a passionate and innovative Pizza Chef/Entrepreneur to work either by the hour or as an independent contractor (preferred). Hopefully, you are familiar with the Tartine method of natural, slow-rise dough fermentation and handling a busy wood-fired oven plus all the Responsibilities below.

PT and Seasonal (May-September). Open every Sunday, some Saturdays. We have a large, fully equipped commercial kitchen including heavy duty dough mixer and adequate refrigeration to serve up to 150-180 pizzas, plus an expanded menu of salads, sides, BBQ, and desserts to up to 200 customers per shift (noon-5 p.m. Sundays). Beverage service is separate and provided by winery staff. Winery also provides live music and social media/marketing.

We are also considering leasing our commercial kitchen to a second entrepreneur (caterer or food producer). This could be one and the same person.

The ideal candidate will possess a strong background in food service, with expertise in menu planning, food preparation, and catering. This role requires a creative thinker who can navigate the challenges of starting and managing a business while ensuring high standards of food safety and quality.

Responsibilities

Create diverse and appealing menus that cater to various customer preferences and dietary needs.

Oversee all aspects of food preparation, ensuring adherence to food safety and handling regulations.

Manage daily/weekly operations, including staffing, inventory management, and customer service.

Build relationships with suppliers and vendors to ensure quality ingredients are sourced locally and effectively.

Train and mentor staff on best practices in food preparation, safety, and customer service.

Experience

Proven experience in the food industry, preferably in roles related to cooking, catering, or restaurant management.

Strong knowledge of food safety standards and regulations.

Demonstrated skills in menu planning and food handling techniques.

Experience with kitchen equipment, including knife skills for food preparation.

Excellent organizational skills with the ability to manage multiple tasks simultaneously.

Strong leadership qualities with experience in team management or training preferred.

A passion for culinary arts and a commitment to delivering exceptional dining experiences.
