Eye Tooth Tavern & Eatery, the newest addition to the Tooth family, is set to open on Anchorage's bustling King Street.
We are seeking a talented individual to join the management team and work with Executive Chef JD as we grow and develop our new restaurant. As a casual neighborhood spot, we're creating a relaxed atmosphere where guests can enjoy delicious food, great company, and refreshing drinks. Our menu will feature a tempting mix of classic Moose's Tooth pizzas as well as innovative pizza creations and a variety of appetizers and entrees.
DUTIES & RESPONSIBILITIES
Daily Operations
- Oversee staff training, development, and hiring
- Actively run the line, ensuring timely and quality food service
- Make and oversee staffing adjustments to fit the needs of daily business and labor targets
- Ensure state and local health codes are adhered to by ensuring that kitchen staff use in-house systems (temp sheets, proper rotation, food labeling, etc.)
- Train kitchen supervisory staff in the proper use of order forms, waste logs, temp sheets, and inventory forms. Review forms daily to ensure they are being completed thoroughly, accurately, and consistently
- Document and communicate daily events and needs through internal systems
- Work closely in tandem with FOH managers to efficiently and effectively communicate information about BOH status, food supply, quality concerns, unusual operation changes, and other relevant building-wide needs
- Actively monitor consumption and waste, adjusting pars as needed for seasonal and occasional business fluctuations
- Adhere to sanitation and safety standards
- Perform all duties to the communicated expectation level and within communicated systems provided by the Executive Chef
- Work as a team with your fellow co-workers and treat each other with kindness and respect
Menu Management and Development
- Review current recipes and sales figures for areas of inefficiency or quality improvement
- Maintain food cost targets
- Make efficiency and food quality suggestions for current menu items
- Assist in the development and implementation of new menu items and monthly specials menu (creating, costing, training staff, etc.)
- Communicate with warehouse and prep departments any needs or concerns that affect the quality, cost, and/or efficiency of current/future menu items
- Work with the management group to coordinate and create menu changes
- Maintain cuisine boundaries aligned with Tooth Company brand and specifications
- Use Margin Edge to track food costs and update menu pricing
QUALIFICATIONS AND SKILLS
Previous supervisory kitchen experience is required. On-the-job tools and training provided. Must have and maintain a current ServSafe Certification.
- Knowledgeable in a variety of cooking techniques and flavors
- Experience training kitchen staff and implementing kitchen procedures or willingness to learn
- Familiarity with menu costing procedures or willingness to learn
- High level of creativity and reliability
- Strong communication skills, both written and verbal
- An attitude that is motivated, detail-oriented, and committed to quality
