JOB DESCRIPTION
Dishwasher
Reporting directly to the Sous Chef, the Dishwasher is depended upon for timely, expedient and thorough cleaning of all dishes dirtied in the restaurant. This position ensures clean cutlery, plates, flatware, glassware and various utensils are always available. The Dishwasher provides for the basic needs of meal service through managing the never-ending retrieving, cleaning, drying and storage cycle of dish duties. Timeliness and efficiency are crucial to this role as meal service and kitchen preparation cannot function without properly cleaned tools. At all times, the Dishwasher upholds the highest standards of cleanliness and safety. Receiving instruction and guidance from the Sous Chef, the Dishwasher conducts appropriate preparation of all dishwashing equipment during a clean, orderly, safe and efficient service.
Responsibilities and Functions

Assists in the management of china, glass and silver storage
Actively upholds compliance on all Health standards in back-of-house areas
Actively upholds compliance on all Safety standards in back-of-house areas
Actively participates and upholds maintenance standards of scullery safety, cleanliness and compliance
Actively participates and upholds standards of equipment maintenance and repair in the scullery
Execute dishwashing and dish storage tasks involved in the day-to-day operations of meal service including any private parties/special events as assigned
Expediently retrieves, receives, washes, dries and stores/returns dishes
Safe knowledge of dish, glassware, cutlery handling and washing
Learns, understands and demonstrates high standard of cleanliness
Executes dishwashing with maximum efficiency, expediency and safety
Remains attentive and responsive to dish needs
Cleans all dishes according to Health standards
Regular and timely collection and removal of trash
Quality Control and Creative Development
Maintains and upholds all safety and quality standards for cleaning
Team Management
Responsible for contributing to a positive, constructive, respectful, safe and clean team
Participates in education and training under the Sous Chef
Adheres strictly to schedule by always arriving on time

Qualifications
Industry-Specific
Ability to follow directions accurately and succinctly
Ability to execute multiple dishwashing processes simultaneously
Basic knowledge of dish cleaning equipment
Basic knowledge meal service flow and needs
Ability to remember and keep track of spoken directions and orders
Ability to provide dining service, bar and kitchen with clean dishes at all times

Prerequisites
Ability to work a flexible workweek including nights, mornings, weekends and holidays
Legally eligible to work in the US

Physical and Environmental Requirements
Ability to lift or move objects up to 25 lbs frequently, up to 50 lbs regularly and up to 100 lbs occasionally.
Ability to continuously stand and walk.
Ability to negotiate asphalt, grass, carpeted floor, wood floor, tiled floor and steps from one moment to the next
Stair climbing
Reaching to floor to pick up items (squatting, or forward bend with shoulder flexion).
Fine motor skills, good hand-eye coordination and depth perception are essential for all culinary duties and dishwashing tasks
Rooms are often dimly lit. Good sight and balance needed for negotiating varied floor surfaces while carrying heavy objects, pushing/pulling heavy carts/hot boxes, carrying hot pans, plates, fluids and food items
