Basic Function:

In support of the Ocean Houses Culinary Vision - responsible for all aspects of managing the receiving process, and proper handling/storage of all delivered food & beverage items in accordance with standards as well as cleanliness of all receiving and cafeteria areas and management of Stewarding staff. Responsible for receipt of all deliveries and proper storage of all items received.

The ideal candidate will be experienced in handling a wide range of administrative tasks and will be able to work independently with little or no supervision. This person must be exceedingly well organized, flexible and enjoy the administrative challenges of supporting a luxury culinary operation at a five star level.

The ability to interact with staff (at all levels) in a fast paced environment, sometimes under pressure, remaining flexible, proactive, resourceful and efficient, with a high level of professionalism and confidentiality is crucial to this role. Expert level written and verbal communication skills, strong decision making ability and attention to detail are equally important.

Leadership Responsibilities:

Member of management team, participating in decisions effecting the overall positioning, planning, and operations of the Receiving function and Warehouse management.

Scheduling, training, coaching and counseling of Stewarding Team; motivating the Stewards to become highly efficient, organized and prideful.

Direct hourly staff as workload demands.

Administrative Responsibilities:

Conduct a weekly walk-thru of all back of the house to discuss; cleanliness of all areas, discuss any equipment that is not working properly and pending work orders, storage spaces are clean and organized and in the proper location.

Maintain proper storage procedures as specified by Health Department and hotel requirements.

Maintain cleanliness of loading dock.

Conduct daily run to warehouse with item request forms from departments

Manage overall warehouse facility

Respond to delivery drivers requests for unloading “ be fully available by Voicera

Ensure loading dock is free and clear for Thursday dumpster removal

Ensure cafeteria is clean and fully stocked against checklist.

Update cafeteria menu; oversee cafeteria cook to ensure consistency and taste as well as healthy menu selections

Ensure garage storage space is clean and well organized. Direct and report departments that are not meeting the standards of cleanliness and organization.

Attend on-going meetings; daily and weekly F&B briefings, weekly BEO meetings, weekly Operation Meetings

Internal Relationships:

Will report to the Executive Chef regarding, but not limited to, inventories, receipt of deliveries, daily receiving reports, and any relevant reporting. Will work daily with the Department Managers.

External Relationships:

Has regular contact with vendors. Maintains appropriate relationships with these and other constituencies in order to enhance the image of the Company and the attainment of its objectives.

Qualifications:

Basic knowledge of culinary operations with demonstrated success, preferably in the luxury resort sector.

Skill in organizing resources and establishing priorities.

Ability to effectively and efficiently handle multiple, simultaneous, and complex tasks and projects

Advanced verbal and written communication skills and the ability to work with a wide range of constituencies in a diverse operation.

Strong strategic, analytical and organizational skills.
