Serve as assistant to the Assistant Executive Chef or Room Chef and assume complete charge of the kitchen during his or her absence.

Under the direction of the Assistant Executive Chef or Room Chef, administers disciplinary action.

Adapt the crew to any change in the volume of business.

Enforce the rules of the Health Department.

Observe each employee in the classification assigned at least once a shift to ensure duties are performed to the Executive Chef’s specifications.

Responsible for dress code and appearance standards.

Assist the Assistant Executive Chef or Room Chef with specials of the day and any banquets preparations.

Maintain a daily production inventory.

Responsible for checking the methods of preparation, sizes or portioning and the garnishing of food.

Assist in the cooking and caring of meats and difficult dishes during rush periods.

Must provide courteous and friendly service to all staff.

Performs related work as requested.

To be successful in this position it will require the following skill setEXPERIENCE: 3 to 4 years experience in a high volume hotel.EDUCATION : Bachelor's Degree in related field or equivalent additional experience.SKILLS: Effective organization skills. Excellent communication skills. Ability to perform basic math. Ability to maintain confidentiality of sensitive information. Ability to present self in a professional, pleasant, confident and well groomed manner. The ability to work effectively with team members, other department personnel and guests. Full knowledge and understanding of company and department rules, policies and procedures. Ability to read, write, and communicate verbally in English.
