Line Sauté Cook

Job purpose for the Sauté Cook is to work at the kitchen's range, preparing meats, poultry, fish, vegetables, pastas and sauces as needed to meet the restaurant's orders.

Key duties/responsibilities of the Sauté Cook:

Works directly under the Sous Chef to execute the Spurwing Menu, Fresh Sheet and Catering Recipes.

Prepares a variety of meats, seafood, poultry, vegetables and other food items using provided recipes for cooking on sauté burners, flat top range and oven.

Assumes 100% responsibility for quality of products served.

Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.

Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

Portions food products prior to cooking according to standard portion sizes and recipe specifications.

Maintains a clean and sanitary work station area including tables, shelves, sauté burners, oven, flat top range and refrigeration equipment.

Prepares item for sauteing or other cooking methods by portioning, seasoning and/or marinating as required by recipes.

Follows proper plate presentation and garnish set up for all dishes.

Handles, stores, dates and rotates all products properly.

Completes required tasks within assigned time frames.

Tracks and reports any food waste.

Assists in other food prep assignments during off-peak periods as needed.

Opens and/or closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.

Cooks only items generated from the restaurant point-of-sale system

Performs related duties such as helping to wash dishes as needed, cleaning and help with any other projects as assigned by the Sous Chef or Executive Chef.

If a meal is returned for any reason, correct the problem without discussion, reporting the reason to the Sous or Executive Chef during a down time or after shift is over.

Takes ownership of station and offers positive solutions and suggestions when necessary to help the station run more efficiently.

Is empowered to offer creative input and menu ideas.

Performs other related duties as assigned by the Sous or Executive Chef

Performs daily, weekly and monthly cleaning duties as described on the Cleaning Checklist

Must remain calm and work well under pressure.
