A. KITCHEN MANAGER

Job Summary

Oversees all duties of kitchen staff and able to fulfill all duties of kitchen staff. Prepares all items from menu fresh daily based on the restaurants recipes and requests of customers, within reason. Daily preparation of food items; knowledge of use of all kitchen equipment, such as fry stations, grill, slicer, mixer, and ovens.

Tasks and Duties

Sets up station according to restaurant guidelines.

Prepares all food items on menu in a sanitary and timely manner.

Follows recipes, portion controls, and presentation specifications as set by the restaurant.

Re-stocks all items as needed throughout shift.

Cleans and maintains station in practicing good safety, sanitation, and organizational skills.

Has understanding and knowledge of how to properly use and maintain all equipment in station.

Assists with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.

Performs additional responsibilities, as requested by the manager.

Must fill in for other cooks as a replacement as needed.

Qualifications

Has a basic understanding of professional cooking and knife-handling skills.

Has a good understanding and knowledge of safety, sanitation and food handling procedures.

Has previous prep or cook experience.

Has professional communications skills.

Has ability to take direction.

Has ability to work in a team environment.

Has ability to work calmly and effectively under pressure.

Has strong problem-solving abilities, is self-motivated and organized.

Has a commitment to quality service; strong food knowledge.

Working Conditions

This position will spend 90% of the time standing.

Occasional environmental exposures to cold, heat, and water.

The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly.

Must be able to speak, read and understand basic cooking directions.
