JOB SUMMARY:
To plan and manage the restaurant, bar, room service and banquet events as appropriate in order to achieve
customer satisfaction, quality service, compliance with Company policies and procedures and
federal, state and local regulations while meeting/exceeding financial goals.
ESSENTIAL FUNCTIONS:
Position is responsible for the short term planning and daily operations of the restaurant, bar,
room service and banquet events. Recommend promotional ideas and procedural changes. Prepare schedules, forecasts, implements, monitors and controls the budgets for the various areas.
1. Manage outlets in order to attract, retain and motivate the employees; interview job applicants, schedule, train, develop, empower, coach and counsel, conduct performance and salary appraisals, resolve problems, provide open communications and recommend discipline and termination, as appropriate.
2. Implement company programs and manage the operations of the restaurant, room service, lounge and banquets as required to ensure compliance with SOP’s, safety regulations and federal, state and local regulations to ensure an optimal level of service quality and hospitality are provided to the guest.
3. Order liquor and supplies and ensure all deliveries are checked in correctly and that all relevant purchase orders and invoices are correct.
4. Forecast, implement, monitor, control and report on the various outlet budgets and their components (labor costs, beverage costs, supplies, equipment, etc.) to maximize revenue and minimize expenses while ensuring adequate supplies and staff are on hand to provide top quality customer service.
5. Have hands on experience with Micros programming. Responsible for insuring that menu items, prices and users are current.
6. Respond to guest trends, needs, issues, comments and problems to ensure a quality experience and enhance future sales prospects.
7. Create, recommend and implement promotions, displays, buffet presentations and ideas
to capture more in house guests and a larger share of the local market.
8. Monitor and control the maintenance/sanitation of the food and beverage areas and
equipment to protect the assets, comply with regulations and ensure quality service.
9. Perform special projects and other responsibilities as assigned
10. Participate in committees as required.
11. Attend weekly staff meetings.
12. Ensure all existing and new team members have Coconino County Health certifications
on file in the Human Resources office.
QUALIFICATIONS:
Previous experience or background in food and beverage service required. Hotel experience preferred.
