ª Prepare a variety of meats, seafood, poultry, vegetables and other food items in broilers, ovens, grills, fryers and a variety of other kitchen equipment according to restaurants standardized recipes.
ª Assumes 100% responsibility for quality of products served.
ª Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
ª Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
ª Portions food products prior to cooking according to standard portion sizes and recipe specifications.
ª Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
ª Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
ª Follows proper plate presentation and garnish set up for all dishes.
ª Handles, stores and rotates all products properly.
ª Assists in food prep assignments during off-peak periods as needed.
ª Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
ª Attends all scheduled employee meetings and brings suggestions for improvement.
ª Performs other related duties as assigned by the Kitchen Manager or manager-on-duty.
Dishwashers
Operating the dish machine
Supervising proper rinse and wash temperatures
Changing water, storing and using dish chemicals properly
Setting up and organizing the dish racks
Removing trash
Exhibiting teamwork
Expo / Expediters:
Plan and manage the order flow
Make sure that all the orders are prepared in time
Assist and manage the final preparation of different food and dishes
Control and oversee dishes before they leave the kitchen
Ensure adherence to all relevant quality and sanitation rules and regulations
Provide assistance in cleaning activities
Serve as a contact point for the kitchen and the wait staff
Take care of customers with special needs and requests
Ensure excellent client service
Give suggestions for the improvement of the restaurants offerings and reputation
Execute a variety of different tasks as needed in accordance with managers requests and directions
